Halmi’s Ramen Bowl

What You'll Need:

  • Ramen noodles (Halmi likes Shin Ramen, but choose your favorite)

  • 2 Tbsp of neutral oil (ex: canola)

  • 2-3 scallions, chopped (for negi oil and garnish)

  • Seasoning Packet from Ramen

  • 2 cups of water

  • 1 egg (in its shell)

  • 1 tablespoon of your favorite peanut butter 

  • 1 egg yolk 

  • Mayo (1-2 tablespoons)(Halmi likes Kewpie, but choose your favorite)

  • Soft-boiled egg (for topping)

How to Make It:

  1. Prepare Negi Oil:

    • In a pot, add oil and heat it over medium heat.

    • Throw in half of the chopped scallions and cook until fragrant 

  2. Seasoning the Oil:

    • Add seasoning packet from your Ramen

  3. Make the Broth:

    • Add 2 cups of water into the pot and bring the mixture to a boil.

  4. Cook the Egg in the boiling water:

    • Gently add the egg (in its shell) to the pot.

    • Let it cook in the broth as it comes to a boil.

  5. Cook the Noodles:

    • Add the ramen noodles to the pot and cook for about 3 minutes, or according to package instructions.

  6. Prepare the Soft-Boiled Egg:

    • While the noodles cook, carefully take the egg out of the pot and place it in ice water to cool.

  7. Add Peanut Butter:

    • Continue to boil the noodles and stir in the peanut butter to the broth, allowing it to dissolve and mix well.

  8. Prepare the Mayo:

    • In a separate bowl, add the egg yolk and a dollop of mayo.

  9. Assemble the Dish:

    • Once the noodles are ready, pour the hot noodles and broth into the serving bowl over the egg yolk and mayo mixture.

  10. Garnish and Serve:

    • Top with your soft-boiled egg and additional scallions for garnish.
